F.e. is it still possible to adjust parameters per menu item?

No

Still possible to adjust themes to detail view etc.

There are two Category View themes available: Theme Standard and Theme Simple
Only one of this two themes should be aktiv.

is it possible to upload more photos in a gallery while photos have different sizes ( f.e. laying and standing pfotos: 580x 340 and 340x 580)

Images with landscape and portrait format in one category should be possible.
But I only use landscape.
